
I was chatting with a colleague the other day and she mentioned eating a salad topped with these things that I can only describe as cottage cheese fritters. She had a prettier name for it and said her family frequently made them. Totally sounded so delicious but when I got home, I couldn’t remember any of the recipe except cottage cheese and pan frying it in butter…and I wasn’t looking forward to the calories of pan frying cheese in butter 🙂

So instead of asking her, last night I threw some stuff in a bowl and used my Le Cou Cou Harmony Air Fryer (one of the best Christmas gifts of years past) to try and recreate this thing I’d only heard about and couldn’t remember how to cook. Well, I can’t say that what I’ve created looks or tastes anything like what my friend’s family makes, but I’m not disappointed in the results. Thus, I share it with you 🙂
I served these atop a spring mix + herb salad with a quickly whisked together vinaigrette (see below) for a hearty salad dinner. Without the salad, I can envision these being an interesting side dish or appetizer as well.
What I like about this recipe is it’s so so so fast and easy. Done before you start cooking with little to no prep time. I also love that you can change the seasoning to adapt to whatever flavor you’re going for. I used one called Vegeta All Purpose Seasoning that a Bosnian friend once told me about for my first try. The following time I used taco seasoning, cumin powder and a chili lime mix and it was even more delicious. Next time I might try for an Italian taste with fennel, some Italian seasoning and parmesan/mozzarella or…Yum! I bet these would even taste yummy with a sweeter tilt by adding a little pineapple or blueberries instead!

Quick Vinaigrette: Whisk together
-3-4 tbs EVOO
-big squeeze whole seed mustard
-big squeeze honey
-healthy splash of lemon juice
**This recipe assumes you have and will use an air fryer. If you do not have access to one of these, then you may try to pan-fry, deep-fry, or bake at 425 F for 25 minutes until browned**
1 cup not packed cottage cheese |
1/2 cup not packed mexican cheese (or any cheese. Pick your fancy) |
1 egg |
1.5-2 tsp seasoning (I chose Vegeta for my first try and taco seasoning with cumin powder and chili powder for the second try, but any combination of herbs or seasoning would suit fine) |
1/2 cup or more of Panko (or if no Panko, breadcrumbs could work) |
